Thanksgiving Day Parade #11: Apple, Sage & Molasses Vegan Holiday Roast with Mother-In-Law Stuffing

Not the best photo of this best meal.
So I'm back on my Mac today and I can't for the life of me figure out how to get the photo editor to flipping work... so not only is this not my favorite picture of this simple yet snazzy Thanksgiving recipe, but it's not frakking edited at all. Kill me. I have a much better photo--really beautiful, and you guys know how hard I can be on my myself--but it won't load. This whole photo situation is probably the most stressful part of this post.

The Treasure
As you may remember, we've been searching for vegan holiday roasts all over New York City. Last week after a pretty tramatic* doctor's appointment, I found myself wandering around near Central Park. That's when I found them. NYC's vegan holiday roast stockpile was being horded away at the Whole Foods at Columbus Circle. So like a good little food blogger, I grabbed as many as I could carry and put them on our credit card. I may have had a little buyer's remorse halfway home when my back freaked out on the subway; but all was forgiven by the time I was preheating my oven. See folks, I didn't just find the usual holy grail of holiday roasts... I found the new kid on the block that's causing such a stir. Yes, I found a Gardein Holiday Roast!

We're big fans of Gardein (obviously) so we've been looking out for this roast since we first heard rumors that it exsisted. And I am happy to report it lived up to our impossibly high standards. Seriously, I'm rough on products and don't post things I think will make anyone question a cruelty-free lifestyle. I think this holiday roast has great texture and flavor, and makes a great canvas for our Apple, Sage, & Molasses baste--which means it's great for anyone who wants to personlize their holiday a little. Yes, we did include tips below on how to level up the gravy that comes with your roast. The only thing I didn't love is the stuffing center - though I love that they included cranberries. Next time we make one, I might just have to get out our flavor injector and doll that up a bit. But really, who can complain about an excuse to make a big pot of your own stuffing?

Hidden in the back of a display of chicken-flavored stuffings was a lone Whole Foods brand vegan stuffing package. It was a great find for lazy, emotionally-drained me and gave me a great excuse to pilage Whole Foods anti-pasta bar. See, I've been playing around with this idea of making an Italian-themed stuffing for awhile now... it's an idea who's time has come. I love this stuffing so much, I had some the next day for breakfast and then like an hour and a half later for brunch. The idea of an Italian-themed stuffing with green olives, mushrooms, and artichoke hearts isn't new. I've been making artichoke heart "oyster" stuffing for years... but I really think the combo of the baste and this stuffing makes for a holiday meal that's both sweet and zesty. Yeah, I used the word zesty. It's a silly word, but it does a better job of describing this really unique and appetizing flavor than, I don't know tangy, savory, or like, piquant. Though piquant seems pretty prefect too.

Thanksgiving is almost here. I apologize for posting this so late in the season, but the clock is a-ticking so let's get started.

The Betty Crocker Project: Vegan Chili-Lime Chicken

OK - So we had a huge bunch of cilantro and so we got a little crazy with it this week. I think there are worse crimes. If you're one of those who don't love the taste of this leafy green -- you can always skip that part of this recipe.

It's another fast and easy recipe that will get you in and out of the kitchen with little suffering. We had ours with some lemon pepper Israeli couscous from Whole Foods made with peas and had dinner in about 30 minutes. We defrosted our Gardein chick'n scaloppini breasts earlier so that definitely cut back on how long this took.

I know a lot of us might be feeling a little food prepping, dish washing and hostessing burn-out after yesterday's festivities so I thought this might help give you an out for dinner for the rest of the week. I mean making sure that the ice chest stays full while the BBQ coals don't go out and figuring out how to keep bugs away from the pie and Soy Delicious is fun at the time but after the fireworks... it's freaking exhausting.

We celebrated this year with an epic game of Civ5 and season 4 of Sons of Anarchy* because Dan caught some kind of death flu on his work trip to Seattle. Oh and we're total nerds. So there was no read, white and blue flag cakes or BBQ burgers for us this year. But that's what grill pans and liquid smoke are for right?

The Betty Crocker Project: Vegan Chicken & Cashew Dinner

Editing a book is a deceptively slow process. It's the kind of thing that seems to go fast and is pretty easy till you realize you've actually gone through several pages and you don't even remember what you've just read. I've heard of similar things happening to truck drivers with great mix tapes on long highways in Kansas. It's not unlike what happens when you start watching Battlestar Galactica or Sons of Anarchy. Except in those cases, you're so amped up, the blur comes from an overdose of awesome.

I've been living lately in this kind of state. I love our book and I think you will too but I hate that I'm a terrible typist*.  I find whole sections of the day disappear in a blur of shortening this and formatting that and then more website stuff and more emails. I take breaks to tweet and post updates on our Facebook page but I've lately come to find an even more sincere appreciation for Betty's Quick and Easy Recipes. In Betty's recipe, she makes the dish more "healthy" by deceasing the number of cashews (fat) but we went another route. We took out the birds and added vegetables and a lot more ginger. It's a fast and flavorful dinner that made our home smell lovely.

No matter what you're busy with right now or what level of chef you are... you can make this. You can do it!

The Betty Crocker Project: Maple Glazed Holiday Roast

So I never grew up with a huge ham for Easter dinner. As many of you already know, around The Ol' Shannon Homestead we look forward to Passover every spring but that's not to say I don't appreciate many of Easter's fine qualities like Sweet & Sara's Vegan Easter Peepers & Skippers and big dinner or brunch parties. Since we became a "we", Dan and I have hosted some pretty outstanding secular Seders for Passover. I can tell you from experience that the best ones took awhile to plan. Which brings us to the other day when I realized we weren't gong to be able to host a huge Seder this year because we just don't have the room and I haven't had the time to rent a space. Last year we had to settle for a big dinner at a Thai restaurant because we were moving. So what's a grrl like me to do with literally years worth of pent up Seder planning? Well, she starts to explore Easter dinner.

She starts to look at the springtime vegetable dishes and desserts and wonder why she never really thought of Easter food as being more than candy, chocolate and of course those damn eggs. I decided to start with something pretty easy but also pretty crucial to any dinner party... the center piece dish!

Every dinner party has one whether they know it or not and from what I gather when it comes to Easter the traditional super stars are Ham, Lasagna and Manicotti. We used a Tofurky to replace the the less compassionate ham but still played around with the whole cloves and baked it with a smokey maple and brown sugar glaze to create a vegan dish that will feel right at home being the center of attention.

Hazelnut Pesto with Vegan Chicken, Broccoli and Orecchiette Pasta

St.Patrick's Day is almost upon us and so last night I decided I should wrap up this week with something green. Like many willful people, I got a certain idea in my head and then focused on making it happen as soon as possible. I wanted to make something with fresh spinach and fragrant basil and lots of  emerald colored flavor. In my Mediterranean heart that instantly meant pesto.

See I'm still quite new to this whole Irish thing and the Sicilian half of my DNA has decided it won't give up that easily.

It wasn't till I sat down to eat that it hit me that besides the color - there really was not much that "Irish" per se about this dinner. It's still a great recipe though that I'm happy to share. Fast and easy and everything you need for a weekday dinner or a quick dinner before a night on the town of green beer and wooo-hoooing* if that's your thing.

Either way - Start your food processors! Let's pesto!

The Betty Crocker Project: Thanksgiving Day Parade #8 - Roasted Rosemary & Dark Beer Tofurky

So this is one of those blog posts where I feel like complete honesty in easy to follow bullet points is called for:
  • This recipe is an amazing way to level up your Tofurky. It has a dark and rich unique flavor that is intended to recreate what you get when you brine a turkey. Our process isn't really anything like the long one used to brine turkeys but the result of this recipe seems very similar.
  • This recipe makes a thin but flavorful crust on the outside of your Tofurky that doesn't recreate a "skin" completely but it's wonderful. So you can really appreciate it.
  • We cooked Brussels sprouts in the dark beer marinade like Betty suggested but it was not my favorite thing to ever happen. The marinade reduces over the vegetables to makes something too strong for me but I do suggest instead steaming or roasting your Brussels sprouts and then using the leftover marinade to make a gravy by adding 1 cup of vegetable broth.
  • You can skip the flavor injector step if you want but it's kinda cool.  You really should give it a try if you can.

I think this photo shows you the delicious crust.

And don't forget to enter to win a coupon for a Free Tofurky Feast!

You ready to show this Tofurky who's boss!

The Betty Crocker Project : Baked Vegan Chicken & Waffles

My only compliant about this recipe is that I didn't add enough Maple syrup in the pictures.
When I lived in Atlanta, there seemed to be signs everywhere for Chicken and Waffles "Shacks". I mean even Motown Legend Gladys Knight had a chain that seemed to be in every strip mall*. Which at first I assumed meant they served waffles in the morning and fried chicken at night. Imagine my Northern girl surprise, when I learned about this heart attack inducing dish was a staple in Soul Food cuisine. I mean I had lived in St.Louis and spent time in Kentucky and Louisiana and never heard of such a thing. But any cuisine can vary from region to region. Take the French dish Ratatouille: It originated in Nice and was simply seasoned with thyme and black pepper but then those show-offs down the coast in Provence started adding all these green herbs and a bit of lavender and the flavor turned into something completely different. Well, Soul Food is no different**. You can go to a completely legit Soul Food restaurant in Texas and have a pretty different experience than you would in Florida or Tennessee. From what I gather, the epicenter of Chicken and Waffles is Georgia. At first it seemed strange to me but then when I thought about it. Is it really that much weirder than having a side of fried bacon or sausage? I mean it's savory and oily meat with sweet waffles.

So when I was putting together a menu for a vegan Soul Food dinner party, I started thinking of ways to veganize this classic unique dish while also making it a bit more healthy but didn't have a proper waffle iron to pull it off. $40 later and here we are enjoying Baked Vegan Chicken and Waffles. I have to admit I've fallen in love with this unusual but awesome combo.

Speaking of awesome combos... Tonight we're going to a Hen Party with free cupcakes! No, not a British bachelorette porn and baked goods extravaganza. There is a party for our dear friend Jasmin Singer over at Our Hen House. If you find yourself anywhere near Manhattan tonight you should stop by and say "Hi". Just Click Here for the details if you didn't already click on the other link.

Even if you can't make it tonight - You can still enjoy this Georgian country classic! If for not other reason than to add it to the list of things you've done in your life.

Leftovers Edition Episode II - Vegan Ranch Mashed Potatoes

It's starting to feel like autumn in Brooklyn. The trees on our street are starting to lose their leaves and I'm trading in my afternoon iced tea fix for a mug of Earl Grey. Hot. The other day Dan and I left our apartment to walk around the city and drink coffee by the fountain in Bryant Park. I'm even thinking of starting my triennial* Buffy & Angel marathon to celebrate the season change but have been distracted with the second season of the British Being Human while I bake and bake and bake. I know you're all judging the choice but sometimes it's nice to mix up your vampire television consumption.

Because our oven is full of baked goods and our stove top is crowded with pots of caramel and berry fillings... it's been hard to find the time and space to make a proper dinner. That's where all those leftovers come in handy and lord knows we have enough. We get a lot of questions about what we do to make those leftovers special and for tips on how to reinvent a dish. In particular, how to make the Ranch Mashed Potatoes I mentioned like a year ago. So here they are! Ta-Da! One of my very favorite ways to enjoy potatoes! Sorry for the delay.

I think if you're looking for an easy recipe to make your dinner a little more special, you've found it. The vegan sour cream does make them a bit creamier and I recommend getting some vegan bacon bits like Bac-Os to toss over the top because the smokiness and ranch really work. And if you're one of those folks who doesn't just live off potatoes... I recommend grabbing some Match Vegan Meats and making these "chicken fingers" and making a pot of smokey collared greens too. And if you're an over acheiver who really loves food and your friends, you'll toss all that on a piece of toasted baguette and pour a little gravy over the too. You'll have an open-faced sandwich that will win over the heart of even the meatiest of your loved one. I mean that sandwich is like the Kenny Rodgers of sandwiches**, little bit country - little bit rock & roll and a whole lotta awesome.

SIGH. Now I'm hungry. To the electric hand mixer!

Vegan Chicken Lettuce Wraps & How We Survived The Heat Dome...

2 years ago today, I married my best friend. Now this might seem like a pretty obvious and trite way to describe a wedding, but it fits. I mean it wasn't like the old-school wedding days, where life as we had known it changed forever. My parents didn't hand me over in exchange for a few cows, and Dan didn't lift my veil with crossed fingers. Our lives slowly began to intertwine long before we ever even kissed. We'd been building a life together for years before I ever put on that off-white dress, and our course didn't really change much from the day we decided to be more than friends in the first place. In fact, the life we had already begun to build together just got a little better... we just dressed up, ate a bunch of cupcakes, and made it legal, is all.

Over the weekend in New York City, numerous same-sex couples (and some not-so-same-sex) finally got to make it legal too. Now, I know a lot of you like to read inside bits about our relationship rather than here me talk about politics. I mean, I get at least 20 emails a week asking about what we fight about and how we move past those bloody battles. But if we were all sitting down to dinner tonight, talking about how proud we are to live in a progressive state would come up. We might also talk about the Pompeii exhibit we saw over the weekend and some thoughts we had about the new Captain America movie... which was freaking incredible*.

And if you were visiting last weekend, we would have have eaten these lettuce wraps that require very little cooking and eased our suffering considerably. See, we were trapped last weekend in The Heat Dome. Now if you're wondering if that is worse than the Thunderdome... it seriously is. We're not big on air conditioning, so a Heat Dome is pretty much a nightmare. Now you would think we were used to heat after years in Virginia. Back then the sadistic humidity gave us an excuse to drive to the beach. On nights when we were feeling kinda fancy-ish, we'd stop by P.F.Chang's on the way back. Their vegan lettuce wrap appetizers are pretty spectacular and always went perfectly with sun burnt shoulders and large lemonades. We made ours with Gardein Crispy Tenders and enjoyed them with some beers from Brooklyn's Sixpoint Brewery**, a game of Civilization, and a giant fan.

And that I guess is why, on the 2nd anniversary of our wedding, we are posting this delicious recipe that helped us do more than just survive the Heat Dome... it was a tiny reminder of how we're not just making it through our lives together. We are, as my husband so eloquently put it, "Living in the Awesome!"

Let us eat lettuce wraps and be awesome! Awesome for all!

Curry Vegan Chicken & Potato Salad Inspired by Kittens!

At this point in the summer, you probably have a few BBQs and potlucks under your belt. You've fired up your grills and eaten a few meals outside in the sun. I have no doubt you've also enjoyed a few pasta and potato salads... the vegan's loyal summertime friends.

If this salad were in the Olympics, it would be the triple axel triple toe loop that would have brought the 80s Eastern European judge to tears. We combined two summertime favorites, Chicken Salad and Potato Salad, and added a warm seasoning twist to this classic and often overlooked chilled dish. We're taking this "side" out of the shadow of those showy pies and veggie burger headliners; just like how Star Trek: The Next Generation began as a spin off of a wildly popular cult classic, but with some tweaks here and there came into its own, and some would argue is superior to the original*. You know what I mean... don't act like you're too cool for Star Trek.

You know what else is cool? Kittens with blogs! Many of you already know Aggie from her many appearances on Facebook and Twitter, but now she has her own tumblr! Yes, my loyal lurkers and dearest friends, that tumblr I started months and months ago has finally found a purpose**... to bring more cat wisdom and adorable cat photos to the internet masses. You can find this much-needed resource in our right hand column: just click on the cat. We're just getting started, so that wisdom is still kinda bare, but give it time and be sure to check back to see what crazy cat adventures Aggie has. I feel pretty confident in guaranteeing they will be ridiculous***.

OK. Let's do this. To the veganaise!

The Betty Crocker Project : Tequila Fajita Vegan Chicken Wings

There has been a kind of overload of awesome happening lately.

Exhibit A: You might know Brea Grant from Heroes or maybe Friday Night Lights, but you will definitely know her from her upcoming role in Dexter. What you might not know is that she writes comic books and reads Meet The Shannons! She also made some bewitching 24 Hour Pickles! How kick ass is that? Answer : River Tam kick ass*.

Exhibit B: I found this marvelous tumbler full of ridiculously adorable and well-educated cats by Sarah Sobole and fell madly in love. It all began when I was sent this:

I've never really seen myself captured so completely in art before**. It's weird... it's like Sarah is spying on me right now. Or perhaps is my doppelganger.

Exhibit C: We made Tequila Fajita Vegan Chicken Wings. I know I've said this before, but if you get a chance to try out these Vegan Drumsticks from May Wah, you really need to. They're one of the best mock meat products on the market, and are great with pretty much any glaze or sauce we've ever tested them out with. They can be grilled, baked, or fried--pretty much making them a perfect replacement for those wings and drumsticks actual chickens need more than we do.

If you can't get your compassionate little hands on these wings, you can always use this Tequila Fajita baste on your favorite vegan chicken on a skewer, and then toss them in an actual fajita wrap. Whatever you do, make sure and make a batch of Salsa Verde. Honestly, it's an amazing combination of hot, tart, and savory that I can't praise enough. If it sounds like I'm gushing right now it's because I totally am.

All and all this week has ended on a high note, free of sudden and inevitable dinosaur betrayals and full of pretty dresses... Yes, I did finally get that bunny dress I've been tweeting about. Expect to see it in action soon, because I'll be wearing it this weekend when we film our first podcast!

Are you ready to be a big damn hero and make some kick ass vegan chicken wings? Grab your tequila and let's go!

Come & Get It! Our Top 15 Favorite Vegan Recipes for Picnic & BBQ Season!

Howdy Partner! (Just kidding; I won't write this whole thing cowboy-style.)

Let's get serious here, because we're about to talk about something I take very seriously... POTLUCKS! See, planning a really amazing group dining event combines art with mathematics, originating in imagination but ultimately rooted in procedure*. There are relationships between the invitees and seating to take into account, and let's not forget making sure you have enough silverware and cups and all those basic resources. And of course, there's the menu. We've collected a few of our favorite Summery BBQ, Picnic, and Potluck favorites in time for this long weekend and compiled them here to make your menu planning easier. OK - maybe more than a few.

These vegan recipes are BBQ and Potluck Tested and Approved.

The Betty Crocker Project : Vegan Smokey Garlic Alfredo with Chicken & Some Springtime Vegetables

So I got Dan's fever plague. It came and went pretty quickly but it was still a pretty annoying thing to have happen when you're so close to putting the putting the final touches on something... like your new home after a move. We're so close to calling this place home now. It's all at that cruel stage where it becomes more like cleaning than decorating. I've also been distracted collecting a kinda odd selection of groceries recently.

See an important part of moving for me is finding out where I can get supplies. I've been scouting out grocery stores and pagodas and keeping notes in my phone*. I've also been buying vegan necessities and oddities as I went from shop to shop. I wish I could compare myself to an adorable squirrel or those sweet little old ladies filling their cupboards and pantries in case there's another depression or emergency bake sale. I mean what kind of little old lady wouldn't have all the ingredients for carrot cake at hand at all times? But in reality, this scenario is more like one of those creepy survivalists in Idaho - stockpiling Daiya, Tofutti, Lightlife and Gardein in case I never leave my home again and venture into civilization.

It's not that I'm anti-social. I'm just really shy... and kinda weird.

So long story short, we needed a vehicle for garlic to defeat our plague and had some fancy organic spinach linguine... Smokey Garlic Alfredo it was! If you're following along in your copy of Betty's Big Red you'll only find Betty's Classic Alfredo. We used that as the inspiration for the base sauce of this dish and tinkered. I mean isn't that the beauty of Betty? She gives us what we need - even if it's just inspiration.

So let's make a lovely light springtime Alfredo that's is way more "low fat" but just as creamy as any of it's dairy ridden peers. We added artichoke hearts and peas to ours this time but this sauce would be wonderful with any vegetables. I already have plans to toss in broccoli next time or maybe some zucchini. Yeah I like to dream big.

Vegan Double Taco Burgers = A Cure for What Ails You

So last weekend, Dan got sick. I had to miss the prom and stayed home to watch Dr. Who. No, you didn't travel back in time. We're talking NYC's infamous Veggie Prom. I know I could have gone on my own, but it's just a part of our relationship. We treat each other the way we'd want to be treated, and I wouldn't have been thrilled if he had gone off to dance the night away while I was stuck home suffering. So I stayed home and we made Double Taco Burgers.

Now I'm not sure if this a recipe as much as combo trick. A few months ago, I was shopping with my friend Marta, who you might remember her from such adventures as The Danannie Wedding and Vegan Tuna Casserole. We were checking out a new grocery store in Norfolk and found a series of skillet sauces created by Frontera and Top Chef Masters winner Rick Bayless... and heaven to Betsy,* one of them is vegan.

Be sure and read your labels - There are 2 green packets. One is vegan - the other isn't. You can see the ingredients list in this post from The Kitchn.

This sauce even uses agave nectar instead of honey for sweetness. So I got one and tested it out. That night we used it to make some Gardein chicken tacos, but this weekend we took it one step further. During my grocery store scouting, I found these skillet sauces in NYC too, and picked some up for occasions just like this weekend... times when we needed something fast and friendly and absolutely fabulous.

We needed Double Taco Burgers! During a time when nothing seems to be going right Double Taco Burgers are here to make it all seem a little less something. I mean, setting up the cable/internet in a brownstone has turned out to be a challenge designed for the Macgyvers of the world. We had so many cables and cords running through our apartment it looked like Hoth. Then Blogger dies, taking blog posts and comments with it. SIGH. Yeah - we needed some thing to fill our bellies that wasn't going to lead to a lot of dishes and was super quick.

OK - I'm going to say it. I mean I have to right?

Help us Double Taco Burgers. You're our only hope...

And We're Back... & this time we made Vegan Garlic Chicken Ramen featuring the Vegan Hard Boiled Egg

Not your dorm room's ramen...
So you may have noticed that we've been M.I.A. lately. For those of you who aren't my buddy on Facebook or Twitter, this might be some big news: we moved to Brooklyn. Not just Brooklyn, but into a brownstone on a tree-lined street in old-school Bed-Stuy. So the past week and then some has been full of the usual moving dramas. You know - the packing, cleaning, and moving of various beloved objects. The unexpected melt-down at the thought of leaving the first home you ever shared with your partner. You know, the one that has all those lovely ups and horrible downs that come with a new and important relationship*. Of course, there is also the realization that you might never again visit this town that at one point you thought was going to be your forever home. This is of course followed by the calm realization that your real forever home is with your old man, and so you pack up your car with kittens and head out into the night... with a few tears.

OK. Now add to that driving a stick shift car from Virginia to New York with only a few weeks of practice under your belt, a few trips to IKEA, and a new apartment that while very charming is notably smaller than your previous place**... and that should pretty much bring you up to date on what we've been doing.

So we thought we'd come back with something easy: Ramen. I've been thinking about making this for months. Like many of you, I too have lived off ramen during periods of my life, and with my life various experiences and earned wisdom have come to develop a respect for real Asian cuisine. I certainly mean no disrespect to their instant counterparts, but the more traditional Asian noodle dishes are pretty much heaven. I mean, noodles to begin with are pretty much divine... so really is it hard to imagine a Pho/Ramen/Lo Mein Heaven? Um - No. I also hope this isn't too braggy, but I'm pretty happy how this little champ turned out. I mean she might not be the prettiest bowl of ramen to ever grace the internet, but she sure was delicious and gave me an excuse to make vegan hard boiled eggs again. Which is always a treat for me.

So to celebrate our first day back to the internet - Let's make some noodles!

Moving Week! Vegan Creole Spice Popcorn Chicken

So it's our last week in Norfolk before we head off for our new life in the big city. I go back and forth between thinking we've made a lot of progress and are going to totally make it out of here in time in an organized way and thinking we are living in utter chaos and pretty much screwed. It's not really an ideal situation for making culinary masterpieces. I mean last night I searched forever for a cork screw that I am now remembering was packed in the box with baking gear the day before. I mean we have stacks of clothes and magazines I haven't touched in months in easy to access piles around the apartment right now but I can't open a bottle of red wine to make a simple summer sauce for dinner. SIGH.

Last night was also a big night for anyone who has ever loved The Celtics* or loves anyone who fits that description. They swept the New York Knicks in the playoffs and made all those New Englanders proud yet again. I could bore you with rants about my job, the move, boxes, learning to drive a stick or even chatter about getting to see my friends' baby this weekend. I won't do that. Last year we celebrated the Celtics kick ass in the playoffs with Big Baby Vegan Hot Wings... This year we're going to veganize a different sports bar favorite : Popcorn Chicken - Creole Spice Popcorn Chicken actually.

Super easy and fast and perfect for a kitchen in flux that has limited access to gadgets. So what are we waiting for? Let's do this...

An Informal Letter to A Vegan Stuffed Crust Mexican Pizza (recipe included)

Dear Vegan Stuffed Crust Mexican Pizza :

I want to thank you for combining two of our very favorite meals - tacos and pizzas in an enchanting,  seamless and ingenious way that also gave us an opportunity to eat avocados and who doesn't love that? I also want to thank you for being so easy that we could enjoy how delicious you were in less than an hour and not have a huge stack of dishes left to do afterwards. This increased our enjoyment of the night by a factor of at least 10*. Mostly I just want to thank you for taking our minds off the fact that the night we had you for dinner at 8:11 PM, the artificially intelligent Skynet global digital defense network was suppose to have become self-aware, trigger a worldwide nuclear holocaust and then deploys legions of robot killers to wage genocide on the surviving humans. Having a spicy vegan stuffed crust Mexican pizza completely distracted us from the evil robot apocalypse and when we partnered it with a Dr.Pepper**- it ended up being quite a lovely night.

XO- Annie

PS - I forgot to thank you for being vegan and therefore only making the world a better place.

The Betty Crocker Project : The Vegan BBQ Casserole

It can be hard to make a casserole look cute.

It's almost April, and I think I speak for a lot of us when I say there's some serious "cabin fever" running rampant on the internet the past few days. I mean, do we really need to argue over every little thing and find fault in every comment and post? How does that make the world a better place?

So I went searching for a Betty recipe to save the day. One that would make the world a better place and give us a little glimpse of our impending summer. BBQ Beef Casserole seemed like a perfect place to start. Yes, I am pretty sure Betty intended this recipe to be a potluck dish, served to many people with sides of baked beans and fruit salad. We decided instead to keep it all to ourselves, and include a few BBQ-themed potluck favorites to make a complete party in a dish. I really channeled Betty for this one.

I admit I was little cautious about this at first... but it was awesome. Here's hoping it makes us all feel a little sunnier...

The Betty Crocker Project : The Vegan Meat Lover's Pizza Casserole

We made ours into personal mini-casseroles.
It's St.Valentine's Day! A day when we're all suppose to show a little love. Everywhere you look - there is chocolate, candy and sugary invaders. Not that that's a bad thing but my Dan isn't really that into "sweets" so really any super powered chocolate heaven explosion would be more for me than for him and I think we've all dated that person. You know the one. The one who (perhaps innocently) enjoys your giving nature in a relationship a little too much and somewhere along the way the relationship becomes a one man or woman show. I think we should all agree this year that we shouldn't be those people or date them. Like a Valentine's Day Resolution. I mean Dan already took a week off work making me food and keeping you all updated with our culinary adventures. He took care of me when I was sick and even watched a lot of Star Trek. I mean a lot. Even after all that... there are still rumors of a present. GASP! I'm not sure what I did to deserve him. Maybe it is Karma from all those years of being vegan. Who knows? Let's not question it too much.

After Dan's crazy week in the kitchen I think he deserves a vegan vamped up version of Betty's Cheesy Pizza Casserole. Don't you? A clever combination of baked rigatoni, pizza flavors and mock meat... I know what my man likes.

Special Edition: Vegans on Valentine's Day

Happy. Healthy. Life.'s Kathy Patalsky's LOVE-ly Chocolate Pom Raspberry Pudding!
Only one week left till Valentine's day. If you're like me, you had your presents and plans worked out about a month ago. You've also prepared yourself for those plans not working out and have plans B and C in place. But I've learned that many of you out there actually aren't like me, and are still searching for that perfect something to make sure their partners feel loved, or maybe just to show a little "self-love" this year. That's why we asked some of the coolest vegans we know to share their romantic plans! Hopefully it might help you find the inspiration you're looking for. So without further ado... here are some Vegans on Valentine's Day!

The Laziest Vegans in the World's John McDevitt and his Post Punk Kitchen & Cookbook Rockstar partner Isa Moskowitz have been pretty busy lately making Omaha, Nebraska into a vegan Mecca. So this year, their plans include kicking back and catching up on their favorite cooking shows, especially Chopped. For dinner, John's going to make Tofu Balls and Pasta, which is an old Moskowitz family recipe. According to John, any vegan can make these Tofu Balls, even a lazy one! We're excited to try them out. After all that excitement, they'll listen to some music and play some board games. To quote John : "We live large like senior citizens!" Sounds like they're living the dream to us!

I think we all must have at least one of Robin Robertson's numerous cookbooks. I know personally we love her Vegetarian Meat & Potatoes Cookbook. That woman knows her way around a mushroom! On her blog Vegan Planet, she's planning to do a "Hearts Afire" Valentine Menu--all heart-shaped spicy food. She's including: a Jalapeno-Studded Comfort Loaf made in a heart-shaped pan and topped with chipotle ketchup; heart-shaped spicy roasted vegetables; a heart-beet salad (with a spicy dressing); and for dessert, a special "Hearts Afire" Chocolate Cheesecake with Hot Red Pepper Jelly! She's also doing a special giveaway of her book, Vegan Fire and Spice on Tuesday Feb. 8th! Um- YAY! (PS- we love chipotle ketchup!)

Sara Sohn from the famous vegan marshmallow company Sweet & Sara is still debating what to do; but it if they dine out, it'll be Candle 79. In case you've never been, we agree with Sara that the food is perfection. This year, their V-Day dessert will be chocolate fondue using Sweet & Sara mallows. Should they stay in, the plan is totally simple but super delicious: chocolate dipped strawberries and a hand packed pint of Lula’s vegan ice cream with Soyatoo whip. They've been busy over at Sweet & Sara sending and giving out a bunch of Heart Mallows as gifts... Still looking for a gift? Plenty of ideas here!

Some of you know Kathy Patalsky from her blog Happy. Healthy. Life. or maybe you know her from her epic food porn site Finding Vegan. Either way we all know that when Kathy's involved, so is hardcore awesome vegan food. This year, Kathy will be making one of her favorite Valentine's Day dessert recipes: her LOVE-ly Chocolate Pom Raspberry Pudding! For dinner, Kathy and her husband have pre-V-Day weekend plans to dine at Dirt Candy in NYC. For chocolates, she's going to swing by Cocoa V and pick out a few amazing vegan truffles!

The always clever author of The Vegan Girl's Guide to Life Melisser Elliot is treating herself to a trip to the gorgeous city of Milan, Italy! Yes, this single gal is planning to getaway to partake in sights, read books in cafes, and eat granita! Her trip actually starts today. She plans on wandering across Italy and meeting up with vegan friends along the way. (Yes, we are dying of jealousy back here in cloudy old Virginia.) If you're looking for some cruelty-free beauty tips for your big night out, be sure and check out Cruelty-Free Face! She has tips ranging from products to check out to how to have long lasting lips... valuable information for a holiday that can involve a lot of kissing.

Over on the West Coast, Quarrygirl.com has the inside track to everything vegan! Making us even more excited about the impeding move to LA, she tipped us off to a few restaurants offering vegan meals for Valentine's Day, and she's going to spend the romantic evening at our favorite one of all, Madeleine Bistro. They're offering an extravagant 7-course tasting menu, which will include pan roasted seitan, vegan fondue, and an array of chocolate desserts for $125 per person. Click here to see the menu. We've experienced Madeleine Bistro tasting menus before, and have never been disappointed! I highly suggest that everyone check this out.

Not to brag, but when it comes to potlucks around here - PETA's Vegan College Cookbook author Marta Holmberg and I bring it! This girl can cook some mean Mexican food, and has the creative spark that makes a great cook. This year, Marta and her fiance' and PETA co-worker Scott Brewer are taking it easy. They're saving money for their wedding and moving to Los Angeles. So this year, they're skipping presents and just treating themselves to a romantic vegan dinner of Gardein Chicken Marsala and Tiramisu at La Bella's in Ghent.
In a town full of vegans like Norfolk, this has to be one of the best date night spots in the city... who knows, maybe we'll see them there!

Vegan Good Things author Leinana Two Moons is always a great source of adorable veganess! This year she's decided to cook her honey a V-Day menu at home. They usually go to Blossom for date nights, but this year she's mixing it up--though she is still planing a stop by Cocoa V for some of their chocolates! (Please note this the 2nd mention of these chocolates. I really must try them next time I'm in the city!)
Leinana was sweet enough to share her special menu with us :
  • Two-Hearts Salad (artichoke hearts & hearts of palm in salad with vinaigrette)
  • Pasta with Asparagus in Lemon Cream Sauce - recipe from Melisser Elliot of Urban Housewife (asparagus, because it's supposed to be an aphrodisiac!)
  • And for dessert, a raw strawberry cheesecake, because strawberries are also supposed to be good for the lovin'!
Besides the fact that it sounds like my dream salad, we think this menu sounds just lovely!

Allison Burgess, president of Match Vegan Meats, is finding herself torn between two pretty delicious date night plans. Her husband is not vegan (yet), but has fallen in love with a wonderful MATCH chicken enchilada dish at one of their favorite restaurants, Schlafley Bottleworks, in St.Louis. He's also falling for Match's new Beef Wellington with a Sherry Demi-Glace sauce that will be launching this spring. So either way - go out, stay home - they'll be celebrating vegan style! Apparently they have a lot of vegan opions on the menu of Schlafley Boottleworks. In the photo is their Hummus Appetizer plate featured on Veg St. Louis.

Stay tuned folks to hear more about what we have planned...
