The Betty Crocker Project : Mini Pumpkin Pleasecakes (Cheesecake)

 I haven't been sleeping all the great lately. It's not really anything to be concerned about. There is no real mystery as to why. I've been sabotaging myself by doing all kinds of things I shouldn't. I mean what do I expect if I watch American Horror Story right before I go to bed?

The other night I woke up in the middle of the night because the cats were bickering in the kitchen and my first thought in my slightly unconscious mind was "They must have cornered that troll* from the 1985 feature film adaptation of Stephen King's Cat's Eye." I mean obviously. Because that's what happens to your brain when you overdose on monster movies. AMC's Fearfest has had me in it's clutches for weeks now. I skip anything with any real gore and focus more on the classics like Teenage Zombies.

Between the leaves changing color and the black and white movies, it just felt like it was time to add a vegan classic to our little blog. Vegan pumpkin cheesecake is actually one of the first recipes I ever tried out on non-vegans back in my Olympia days when I worked at a domestic violence shelter as a sexual assault counselor. This recipe has evolved a lot since that first Thanksgiving cheesecake I brought for the families and residents in the shelter. That while I have fond memories of it, I am willing to admit was a pale shadow of this recipe. It's a much firmer and creamier pie. I've learned how to have a more logical head around pumpkin. I mean it's a fall tradition I respect but over the years my maturity has brought an understanding that sometimes you don't have to use the whole can**. I also have to admit the New Yorky style of this version's sweet almost cookie-ish crust makes it my favorite but you can also put this filling in a regular old pie crust and not sweat the spring-form pan. Either way, pumpkin cheesecake is awesome.

The Betty Crocker Project : Siesta Taco Soup

Oh. Steam on the lens. You are my nemesis today.
Some of you have been wondering where the frak we've been, and it's justified. I mean, seriously, it's been a week and we've been completely and unforgivably MIA. It really is a fair question to ask of bloggers who cook and post every day but who, without warning, disappear like magic. It's kind of nice to know that what you put out into the world would be missed.

Well, nothing scandalous happened. We weren't abducted by aliens or trapped under something heavy. We just went to a wedding. A charming and sublime DIY wedding at a breathtaking ranch in San Luis Obispo, CA. A wedding that I will gush about in another post, because last week I posted this photo of our Taco Soup in progress and there were so many messages and emails... well, I feel like you'd rather welcome September with a yummy soup recipe you can make in your slow cooker so you don't have to worry about heating up your home while fall is still more of an idea than an actual weather situation. I mean, I'd rather be eating this soup right now than pretty much doing anything else. So I get it.

If you take a look at Betty's Taco Soup, you'll see we took a lot of liberties... and since we made ours in the slow cooker it only seemed right to throw the 'Siesta' in there - sleepy little soup that it is*. If you're following along in your own copy of Betty's Big Red, you'll notice a few 'Feistas' thrown about from time to time on the Mexican-themed recipes. Which I actually kinda like. Those 'Feistas' are just the prefect level of campy. They remind me of something Mad Men's Betty Draper would serve to her kids during a break in her chain smoking. I'm not sure why that appeals to me, but in a weird way it totally does.

Taco Soup might not sound that good at first, but much like its friend Pizza Soup, it's surprisingly delicious and awesome. You might have to look over the ingredients to be won over. Here's just a hint of how good this soup is - if you slice your onions thin enough, they'll melt in the broth, making an onion soup flavor and texture that I actually described as "gorgeous" like a tween with a crush. Yeah - that really happened.

The Anti-Kobayashi Maru Contest

No not this Maru... Silly.
So the other night I was tweeting with John McDevitt from The Laziest Vegans in the World & Vegan Omaha about Star Trek... and it got me thinking about the Star Trek reboot and how James T. Kirk found a way to beat the infamous Kobayashi Maru.

Now if you're cool enough to not know what that is... it's a test given at Starfleet Academy to all potential captains. It's the basic 'No Win Situation'* featuring Klingons, their Neutral Zone and a doomed civilian vessel. Nobody likes a no-win situation--so it got me thinking about how to create a Everybody Wins Contest!

It also seems like a great time to do it because we have to celebrate our Facebook page hitting 7,000 followers (GASP) and our new Meet The Shannons T-shirts! It's like Blogger Law. Curry Vegan Chicken & Potato Salad Inspired by Kittens!

At this point in the summer, you probably have a few BBQs and potlucks under your belt. You've fired up your grills and eaten a few meals outside in the sun. I have no doubt you've also enjoyed a few pasta and potato salads... the vegan's loyal summertime friends.

If this salad were in the Olympics, it would be the triple axel triple toe loop that would have brought the 80s Eastern European judge to tears. We combined two summertime favorites, Chicken Salad and Potato Salad, and added a warm seasoning twist to this classic and often overlooked chilled dish. We're taking this "side" out of the shadow of those showy pies and veggie burger headliners; just like how Star Trek: The Next Generation began as a spin off of a wildly popular cult classic, but with some tweaks here and there came into its own, and some would argue is superior to the original*. You know what I mean... don't act like you're too cool for Star Trek.

You know what else is cool? Kittens with blogs! Many of you already know Aggie from her many appearances on Facebook and Twitter, but now she has her own tumblr! Yes, my loyal lurkers and dearest friends, that tumblr I started months and months ago has finally found a purpose**... to bring more cat wisdom and adorable cat photos to the internet masses. We're just getting started, so that wisdom is still kinda bare, but give it time and be sure to check back to see what crazy cat adventures Aggie has. I feel pretty confident in guaranteeing they will be ridiculous***.

The Betty Crocker Project : Caribbean Black Beans & Rice

I have always been intrigued by papaya, but never actually bought one. I mean, they lounge around the grocery stores like odd alien rock stars that you can't really can't help but notice. It looks like a bewitching space fruit that an unlucky red-shirted Star Trek ensign would eat in careless curiosity. Yet, I've always wanted an excuse to get one, and thanks to Betty, here we are!

There are dozens of ways to make beans and rice in the Caribbean, and it's a become a classic dish. Now, some will say that rice isn't native to the Caribbean, and that it was brought over with Chinese workers once slavery was abolished, so it should be considered more of a Caribbean hybrid. I'm not Caribbean, and so it's not my place to say what should and shouldn't be included in this culture. But I can say that one of the things I find the most beautiful about Caribbean culture is that it combines African, Portuguese, Spanish and Native American Island cultures in a really beautiful way. Why draw a line and exclude Chinese imports? That's one of the beautiful things about food--you can travel the world and share your home at the same time through food. It's kinda magical really. I guess if you look at it like that you can see why those doomed Star Fleet Ensigns are always throwing caution to the wind.

I'm hoping this take on Betty's recipe does this classic dish justice. We added a lot, but I think the cilantro really brightens up the black beans and the jerk flavoring adds a unique warmth and spice. Not to mention this an excuse to experiment with papaya.

The Betty Crocker Project : Whole Wheat Cheesy Pesto Biscuits (Crackers)

So last night it occurred to me that I might be watching too much Star Trek when on the drive home from dinner I started a sentence by saying "Well during The Klingon Civil Wars...".

Yeah I did that but in my defense I also baked these adorable vegan Cheesy Pesto Biscuits/Crackers for Dan to eat with the soup he brings to work for lunch. This recipe makes around 20 of these little fellows, are pretty easy and are tasty enough to make even my most ridiculous tangents seem charming... Hopefully.

The Betty Crocker Project : Avocado & Smoked Sheese Salad with Toasted Walnut Dressing

So I've been watching all the Star Trek Movies. It's been a bit of a marathon - if you will - and pretty much an awesome 48 thus far. Here are just a few of my preliminary observations :
Oh and while I was trying to complete my mission to write this blog post - I found  a pretty amazing picture of Spock punching Wolverine in the face and had to share.

Another mission I have had lately is to try to eat a salad a day. There are a lot of cookies floating around this home of ours right now and other various deliciousness and although we are still having smoothies for breakfast and I have stopped drinking caffeine... well I still wanted some salad in my life. I do admit that this salad has heaps of avocado and sheese so it might not be the healthiest but it is still one of the best Betty Salads we've made since starting this project. I love this Toasted Walnut Dressing and can't wait to try it with some fresh bread or just some baby carrots. I am pretty much in love with it x1,000.  I love it like Captain Kirk loves women with big hair.

The Betty Crocker Project : Challah Atcha'!

I have never baked Challah bread so this was a huge thrill for me to find this recipe in Betty's Big Red. Looking at it it seemed easy enough to veganize so that made me even happier because you see tonight at sundown Dan and I will be celebrating our first Hanukkah as old married folks. We're exchanging presents, lighting candles, spinning dreidels and watching basketball - you know you just like Judah & the rest of those bad-ass Maccabees did back in the day.

So for your enjoyment - here's my favorite Hanukkah song! You have to hit "Read More" for the the player to show up. I figure since no one listens to the radio anymore you folks won't be too sick of it. Besides I have to admit this song still makes me smile* everytime. Everytime! It also helps me lead into this :  I dedicate this bread to Captain Kirk and Mr.Spock - both Jewish!



So if your Festival of Lights has been missing this Jewish classic - here's a recipe that might just fill that hole on your holiday table.

The Betty Crocker Project : Italian White Beans with Chicken

It has been brought to our attention that people prefer blog entries that are "more personal." This is a pretty personal entry for me.

When I was little, around kindergarden, I had a deep clandestine love for My Little Ponies and was running an extortion scam to get them. See, I didn't get the school thing at first. There's a family anecdote about my father sitting me down to talk about my first report card and my my teacher's remarks. My response, was "Who is that lady? Why do I care what she thinks?" As you can see, I've changed a lot.

So, my mother started bribing me with Little Ponies, Charmkins and GI Joes. Good report cards and spelling tests got me points towards my next pony. My very favorite was an orange gal with freckles and yellow hair named Applejack. She slept in my bed and traveled in my backpack. But for reasons I still don't really get, I would hide all my ponies. I would brush their hair and feed them sequins every night. Then I'd line them up under my bed skirt, where no one could see them. Eventually my family moved, and my parents started purging. There was this moment when they asked me if I ever played with the ponies - and I failed them. They were boxed up for Goodwill; even Applejack*. Is it weird that still makes me sad?

What does this have to do with beans? When I was growing up, my mother made this dish, but she called it "fagioli": a term she used pretty loosely for any dish with beans. I grew up eating this on nights when no one really wanted to cook. I loved it - especially with a big piece of garlic toast.

When I found Betty's recipe, my guilt reminded me of poor Applejack and her friends (this is Moonstone - my 2nd favorite). Then the most amazing thing happened; I found these ponies. I nearly fainted. And like any recovering addict, my head began swimming through memories of little purple lashed eyes and ridiculously long manes and that powdery fragrance of the plastic. I want them all. I want to let them boldly run free on my desk and book cases. I know my public declaration has come too late for poor Applejack, but I hope someday I'll be able to give these nerd ponies the forever home they deserve. Until then, I'll enjoy this "fagioli."

PS - This recipe takes about 10 minutes and tastes like home.

The Betty Crocker Project : Fondue, Green Beans with Shiitake Mushrooms & Asparagus with Dijon-Maple Sauce

So yesterday, we talked a bit about Trekkies and my fascination with them. When I am totally honest it isn't so much a fascination as it is a sincere admiration. I love it when people own their "freak flag" per say and aren't afraid to be themselves.

Here's one of my many many freak flags : Sometimes I like to be "French". I love French music. I like French movies. I wear black a lot - maybe too much. I like bike rides and wearing hats all year round. I've even been known to wear a scarf with a t-shirt or sundress. I LOVE vegan French Food! I know this sounds obnoxious. I guess if we are being honest, I am a Frenchie ( I am also the most mixed up non-delinquent on the block).

So really it only makes sense I would get so excited about Betty's Fondue. It seemed like with all the bounty from our Farmer's Market Crusades*,  it was only right that we should include a good sized pot of fake cheese to dip stuff in. ALSO - These 2 vegetable recipes were already vegan and are good on their own so don't dip them in the Fondue pot unless you feel compelled. These Betty vegetable recipes needed very little tweaking.

The Betty Crocker Project : Italian Chopped Salad & Asiago Bread

So you had to know this was coming. We're going to talk about Star Trek today.

Many people know that Dan and I live in a house divided. He grew up in the Red Sox Nation and I'm from Yankee stock. I love TV that is so bad it is amazing and Dan would prefer to spend his TV time with nobler pursuits like killing Xbox mutants. When it comes to one of the most heated debates in The Nerd Nation, my husband, The Love of My Life, thinks Jean Luc Picard is the baddest cat to wear a Federation Starfleet uniform. OK, I have to admit that the photo the Picard link goes to is sweet but I can't help it- I'm more a Kirk girl.

It's not like we're Trekkies or anything. Though I would put the movie Trekkies in my top 100 desert island movies. I find them fascinating. This is just one of those things that comes up in the life of someone who is not exactly "cool" and you develop a stance on. Probably in the same way people who are "cool" have opinions on Abercrombie and Fitch t-shirts and spray tans. I'm getting to my point. 

This week you are going to notice a lot of vegetable recipes because we totally loaded up at the farmer's markets on the way home from Assateague Island. You may love some more than others but unlike Star Trek Captains - you don't have to have a favorite. You can love them all equally. *
