Super Fast & Easy Soyrizo Pasta Dinner

So I admit it. I burnt myself out. if you know me in person -- you know that me admitting this is a huge deal.

After years of working 40+ hours a week in the animal rights movement and writing this blog and then writing our book and now starting our second book... I'm exhausted. There was also a slight shift in this blog that was unintentional but after taking a little break from posting regularly I can see pretty clearly. See in the beginning this blog was about our mission to make anything and everything vegan but as this blog became more popular and more and more people who I didn't know and who have never eaten any of my food began to read this thing -- well there was this pressure for lack of a better word -- to not have typos and never admit that that I burnt a cookie or that a recipe was anything less than a cruelty-free dream come true.

I neurotically tested and tested recipes for the book and I tried to keep up with all the emails we get and failed. Somewhere in all this I started to feel like a little rock was sitting on my chest. I started to stay up late worrying that people won't like our book and worry that people wouldn't read it and understand that Betty Goes Vegan is full of great weekday standbys, old family favorites and guilt-less pleasures. It's also about helping people use all these great vegan products out there to their full potential. I mean yes a lot of us are DIY types but most people in our society choose their food based on convenience, cost and flavor. I've been doing vegan outreach for over 20 years now and I keep hearing the same reasons why people were reluctant to go vegan : giving up their favorite dishes, weird food and inconvenient. The reasons I keep hearing why people stopped being vegan : giving up their favorite dishes, weird food and inconvenient. That's why Betty Goes Vegan is carefully designed to not just help people go vegan but stay vegan by turning old meaty and cheesy favorites into vegan classics.

Yeah. I've lost a lot of sleep lately over it. It can be scary to put yourself out there and care about things. But there was a few things that have happened lately.

  1. I read this post by Bonsai Aphrodite. See after 3 years (just like us) she also was dealing with a serious case of burn out. I related more than I liked to almost every line of this post and after reading it had this moment when I asked myself why something I love as much as this blog wasn't making myself deliriously happy. So I remembered why I fell in love with this blog and vegan outreach to begin with.
  2. A vegan bakery named The Hannah Banana Bakery in the UK posted photos of our Thai Lemongrass Tofu Tacos and I started to cry a little. I have no idea why I get so excited when you guys send me pictures but it made me think over my morning tea and inspired me to write this long post and to get back to sharing that joy with all of you!

So here I am sharing with you a dinner we had the other night that is super simple and fast. So you know less time in your hot kitchen. It also features Tofurky's new vegan Chorizo style grounds but you can also use your favorite vegan soyrizo product if you can't find the Tofurky grounds in your area yet. I do recommend enjoying this with a salad. I try to get greens in every meal and this recipe lacks greens. Besides that... It's a pretty much a perfect weekday dinner.

I'm also promising that I'm giving up my little rock of doubt and fear... insecurity and getting back to posting on a regular basis. I'm trading in that rock for hope and not taking myself so seriously... and soyrizo pasta dinners.

It takes a village to make Mexican Tater Tot Personal Pizzas...

You maybe be asking yourself why this isn't part of The Betty Crocker Project. It's a fair question since tater tot pizza seems like something right up that red spoon alley. But in truth the inspiration for this over the top awesome dinner came from a Twitter exchange I stumbled into with vegan deity Sarah Kramer and John McDevitt - you know might know him as The Laziest Vegan, cruelty-free cover-girl Melisser Elliot and Julia - The SnarkyVegan*... somewhere towards the end I think The Discerning Brute  Joshua Katcher popped in. It was a tater tot love-fest/brain storm. Which inspired Sarah to create this lovely Poutine Pizza and for us to enjoy these Mexican Tater Tot Personal Pizzas a few days later. 

Now we went Mexican with our tater tot pizzas because we had the avocados, jalapenos and salsas and because it seemed like a good way to work a few vegetables in there but really I hope this concept catches on and that we come to see more of these crispy little buddies on all kinds of pizzas in the future. You owe it the 1st grader inside you to make a tater tot pizza at least once in your life... you never let them color anymore.

Sticky Fingers & The Mini Working Blues

Once there was a vegan bakery hidden in the heart of our nation's capital. This was before this recent Vegan Renaissance of books, bakeries and convenient vegan products. This bakery was nestled in a charming basement with outdoor seating and was quickly becoming a destination spot for vegans all over the world. Of course, I'm talking about Sticky Fingers Bakery.

When I think back to the years I spent living in DC, Sticky Fingers stands out as playing role in most of my fondest memories. Getting soft serve and Little Devils after a day of leafletting with Compassion Over Killing or having a friend bring me one of their remarkable chocolate chip cookies after a long work trip... well, these were the things I remember about DC with a smile. Which is why I am doing something today I almost never do. I goofed off on Sunday and took a break from editing to play but I ultimately it was for a good cause.

It's The Great American Meatout today and dedicated activists are handing out samples and resources to help Americans make eating choices that are better for them, the environment and of course the animals*. Compassion Over Killing (COK) has two enormous subway sandwiches made with Tofurky Deli Slices that they're handing out in downtown DC. I am landlocked at home editing the breakfast chapter of our book and enjoying more than a few of the mini Working Blues Cupcakes (ginger cake with bourbon peach filling and blueberry frosting) I baked from Doron Petersan's new cookbook Sticky Fingers' Sweets.


Before she was the reigning champ of Cupcake Wars and Pinup for Pitbulls, Doron spent years earning her stripes as an advocate for animals and a trailblazer for future vegan bakeries. When I knew her she had one of the most beautiful and sweet rescued greyhounds I'd ever seen. These days she has an adorable rescued pitbull and is a proud new mom. So spending Sunday with my copy of Sticky Fingers' Sweets was a trip down memory lane with an old friend and someone I truly like.

Even if you've never been to Sticky Fingers new sunny location with twice the seating of it's original nook and serves a vegan wonderland of sandwiches, hot dogs, baked goods or whatever -- you'll appreciate this book and should add it to your library. It's more than just swirling cinnamon rolls, orange cranberry scones and peanut butter pies. There is also Seoul Sticky Bread and Key Lime pie. This book captures the fun and creativity that has turned Sticky Fingers into the famous vegan institution that continues to draw compassionate eaters from around the world.

I know you all want me to post this recipe but I'm sorry it's not mine to share. I can tell you that while I am buried in final edits and reviews for our book I found taking a break to bake -- well was pretty much the best thing ever and even if you are just a Meatless Monday type -- this book belongs in your kitchen.  


*Can you think of anything more patriotic than helping your fellow Americans take better care of themselves? Seriously?

Special Edition: Vegans on Valentine's Day! Episode II

I know we're behind on posting this. We left the country at the end of January for a long overdue escape and found ourselves in a few situations where the internet access could have been better. It's probably a good thing. We aren't very good at that whole "unplugging" thing. So while I do feel pretty bad for not being able to post this sooner, part of me knows that having more time to enjoy Rome, Athens and Istanbul was a good thing - in the big picture sense. But more about that later. 

Today we're here to talk about St. Valentine's Day! Tonight, you might find The Shannons at Soy and Sake in Manhattan or maybe we'll camp out at home with a bottle of wine and some Doctor Who... maybe both. Here's what some of our favorite vegans are doing for St.Valentine's Day with their significant squeezes: 

I would bet even the newest vegan knows Colleen Patrick Goudreau. Her numerous books and 30-Day Vegan Challenge have made her a reliable resource for vegans and not-yet-vegans for years! What you might not know is that she is a pretty romantic lady. Here's a little glimpse into  her plans and her dreamy marriage: 

To be honest, we're probably more romantic throughout the year than we are on Valentine's Day. We're sappy dorks and do lots of lovey dovey things on a regular basis, including doing "planned surprises" for one another. We alternate each month - one month he says "I have a surprise planned on X date, so don't make plans," and I'll do the same the next month. HOWEVER, on Valentine's Day proper, David and I are treating ourselves to the Prix Fixe romantic dinner at Millennium Restaurant in San Francisco along with another couple, our good friends John and Randy. We recently renewed our vows for our 10-year wedding anniversary, and John and Randy led the ceremony. Friends and family came to our home to celebrate with us, and Chef Barry from Local Love catered an amazing (vegan of course) dinner. The weekend before Valentine's Day, we're going up to Farm Sanctuary (the CA shelter, which is just 2 hours from our home) to visit a newly arrived baby goat who has been named after my dear friend, Michael Scriber, who died tragically and unexpectedly in July of last year. Scribbles (a nickname given to Michael) is adorably adorable, and we can't wait to spend the day with him and the other rescued critters. Can't think of a more love-filled way to celebrate Valentine's Day!


Most people know Chole Coscarelli from her historical win for vegan baking on The Food Nework's Cupcake Wars in 2010 but what they might not know is that she is a cruelty-free pro at more than just pastry and she has a book coming out in March that we're looking forward to checking out! This year, she has two new loves in her life, her brand new adopted chihuahua puppies! So she will probably stay home on Valentines day with them and cook something delicious. Most likely Fettuccinne Alfredo for the humans and Peanut Butter Dog Cookies for the pups (both recipes from her upcoming cookbook Chloe's Kitchen)! She feels and we agree "Home-cooked food is the best way to celebrate love."



Of course, this year I was thrilled beyond belief to see Doron Petersan from Sticky Fingers Bakery not only on The Food Network's 2011 Cupcake Wars defending the title for vegan bakers everywhere but kicking some serious culinary tuckus and taking the crown! When I lived in DC, I was a loyal fan of her exceptional bakery and was thrilled to she her get the recognition she deserved. As if things couldn't get more awesome for this compassionate cooking powerhouse - Doron's book Sticky Fingers Sweets comes out this week! So tonight she's going to be taking it easy after some pretty busy months following her win. "It will be an at-home love fest this year.  No better excuse to make our favorite dish; fettuccine pasta, porcini mushrooms, garlic, rapini, and a touch of  truffle oil.  And cupcakes, of course!"





People for the Ethical Treatment of Animals, Senior Campaigner Ashley Byrne and Green is The New Red's Will Potter live in different cities (DC/NYC), so they had to celebrate Valentine’s day a couple of days early with Will visiting NYC. Their plan was to start the day with donuts and coffee at Dun-Well Donuts in Brooklyn, and end it with sundaes at Lula’s Sweet Apothecary.  And since Ashley's birthday was on February 11th - they actually had an excuse to visit Lula's a few times. If last year is any indication of what she can expect, they'll also be enjoying a birthday cake from Headless Horseman bakery (featuring her handsome dog Mongo), chocolate from Sjaak’s from Will, and an amazing vegan birthday dinner at John’s on 12th. All this a side of sleeping in with food and sugar comas by the time Valentine’s day actually rolls around!*

Of course, no Vegans on Valentine's Day post would be complete without mentioning Florian and Shannon Radke, the sweethearts behind Cinnaholic Bakery in Berkeley, CA. This duo is pretty much the definition of romance and cruelty-free sweets! But here's where I suck. See at the beginning of the month - They had this extremely cool project they were working on with the incredibly cool Beagle Freedom Project in Los Angeles. They were donating $5 for every Valentine's Day order that came in before February 9th. But we were in Europe then and this post didn't go up in time. So! Please consider donating to help those beagles anyways and/or ordering your sweetheart a dozen spicy and sweet rolls as a "just because I love you" treat. Both are rewarding in their own way...

Happy Holidays from The Shannons!

We didn't make this the internet gave it to us.


I know we've been MIA lately. I've been completely submerged in our book. Last night I literally passed out on the sofa with my laptop about a foot away. I was up till 3am with Fright Night on and a cold cup of coffee trying to think of new ways to say "blend" and "mix" while still making sense. Spoiler Alert! Our book will have a lot of blending and mixing in it.

I am yet again hopelessly behind on my emails, Facebook messages and as always my dishes. Seriously not even 'college me' would approve of the state of our kitchen at this moment. But I enough about me. I'm getting a lot of emails asking for suggestions for Christmas and Hanukkah dinners. So I went through and compiled this greatest hit list that I hope will help some of you out with inspiration or remind you of a recipe you liked but maybe you haven't made since last year... whatever.

Thanksgiving Day Parade #10 : Pomegranate & Cranberry Sauce

So there has been a perfect storm of bad luck lately. I'm having a hard time right now remembering what came first. Let's see Dan had to go to Denmark and Israel for work. He's working on this new project having to do with electric cars which is completely awesome except that right now we're writing a book and I miss him when he's not here. We spent all those years apart. I wasn't really all that surprised that when he got home, I felt a part of me that I didn't even know was having some kind of silent tantrum - exhaled. You never really realize sometimes how far you've come or how happy you are till the things that make you happy go to Denmark and come back with pretty scarves for you.

Oh yes and speaking of writing a book - the screen on the laptop I usually use literally burnt out*. So I had to temporarily move to a much smaller machine that didn't have all my files and photo. I know some of you have noticed the lack of posting. I know others who are currently recipe testing for us have been patiently awaiting emails with attachments that were smoldering away in a broken machine in Park Slope. It's been back now for less than 24 hours and it's like having an old friend back. A friend that always has interesting and funny things to say - well show.  

There has also been a birthdays, holidays, shopping, friends visiting the city and all this typing. I've missed most of these things because it's hard to type and go to birthday parties. We even had to postpone Dan's birthday because of all the typing.

We also had a great time last week being one of the Special Guests on VegNews' Holiday Twitter Chat - Turkey Talk. We shared some recipes and met a bunch of awesome tweeters. Robin Robertson shared her Pumpkin Tiramisu recipe. I'm convinced this is a work of art and am dying to try it out. Over at VegNews they launched their first Holiday Cookie Contest with an amazing first place prize!

But enough chatter. Tomorrow is the big day! The Super Bowl of Food! I feel terrible that we weren't able to add more to our Thanksgiving Day Parade this year. It's been too much for me really. But before I miss it - I thought I would share this last minute recipe that is super easy and quick and classier than those tin can jelly molds. It also has so much vitamin C in it - I'm pretty sure it will make you look a year younger. Isn't that what anti-oxidants do**? I think I heard Suzanne Somers say that once.

I love the flavor of this sauce on Tofurky sandwiches and on biscuits and off my sticky fingers. I know a lot of you already have your cranberry sauce set but if you haven't... and if you were considering skipping it... I hope you'll give this recipe a try. It will make you understand how cranberry sauce earned it's spot on the table during one of the high holy days of food***.

Where we're going we may not need roads but we're going to need these books! (Yes this is a pretty awesome contest)

Don't worry it will all make sense.

I think every vegan hopes that a day will come when people all over the world are willing and able to adopt a cruelty-free lifestyle that's better for them, the environment, and of course, the animals. Until that day comes, it's up to us vegans and veg-curious to help show the world how easy and fun being a compassionate consumer can be. This is the story of one anonymous reader who is doing what she can to help make this hope a reality.

Recently Dan and I got a email from a reader (who wishes to remain anonymous) who wanted to donate some books for a Meet The Shannons contest. She wanted the books to be prizes at a benfit for Farm Sanctuary, but plans had fallen through. Being an awesome activist, she wanted to make sure these books made it out into the world to help inform and educate people about how easy and important a vegan lifestyle is. So she asked that we give them away on our blog. Challenge accepted!

When the box came, it had a lovely note and 4 brand-new never-been-touched books! Four books that any vegan or veg-curious or just plain animal lover would want on their shelf.

We tried to figure out what would be the perfect contest. We wanted to do something really special--but I'll be honest, we're really focused on the Meet The Shannons book right now and the days are a blur of typing and cooking. Type Type Type. Cook Cook Bake Cook. Wash Dishes. Repeat.

But somewhere in all that, I found these beautiful organic carrots (see photo above) at the market around the corner. Today's is Dan's Birthday!

Today is the anniversary of the best day of all the days! Today is my husband and co-pilot for Meet The Shannons Dan's birthday!

Obviously I'm madly in love with Dan but I do have good reasons. He's so creative, thoughtful, smart, fun and dedicated to making the world a better place. I could rave about what a lucky gal I am or brag about where I'm taking Dan to dinner tonight but instead I'll just ask you to please do something sweet for the animals and take a not-yet-vegan friend out for a veggie burger tonight for Dan!

The world really is going Vegan! Yes! There will be lots of pictures!

Everyday we get emails from all over the world from people who are living or looking to explore a cruelty-free life. Last night, I was looking through the stats for our Facebook Fan Page and was incredibly impressed to see that literally people from all over the world from every age group and demographic are interested in being vegan! I have to admit if you had sat down 16 year old me and told her that - she would have never believed you. I was a very jaded teenager*.

So you can imagine how happy I get whenever I hear about a new awesome veg-friendly restaurant. I mean for a long time vegan restaurants had a pretty bad rap for being nothing but sprouts and nudists. They were never really that bad in my opinion but these days there are pretty revolutionary things happening in veg-friendly restaurants. A-list celebrities like Ellen DeGeneres and her wife Portia de Rossi are opening vegan restaurants and you can pop into places like Foodswings in Brooklyn where you can enjoy vegan Butterfinger Milkshakes and Pizza Fries. I mean this is the definition of a dream come true.

So we thought it would be fitting to post some photos from some of the vegan hot spots around the world! I couldn't fit them all in one post so here are some highlights in a slideshow. NYC gets Vegucated!

It's a scientific fact that for centuries, New York City has attracted a higher percentage of the most talented and creative people in the world than the original York (or as some might call it, Old York City). When we moved here, I have to admit I was both excited and intimidated by this. I mean if we're being honest here, I'm more Brooklyn than Manhattan, and sometimes I'm pretty sure the Manhatteners can spot it. How could they not? But tangents about my awkward nerdness and the social dynamics between these two neighboring boroughs aside, we were both excited about moving to New York because the few people we knew here were part of that talented and creative demographic I mentioned earlier who are busy doing some of the most amazing things to make the world a better place for animals. A lot of those spectacular people were at the New York City Premiere of Vegucated last week.

It was a sold-out show with an audience of 500 beautiful people dressed for the red carpet in a city know for its fashion.  But people weren't just there to get their picture taken; this crowd came ready to see this new feature-length documentary that followed three meat-loving New Yorkers experimenting with a vegan diet for six weeks. I know I've been raving about this film a lot lately, but I just got so excited when they won the award for Best Documentary at this year's Toronto Independent Film Festival. It's the kind of film that everyone - even the most experienced activist and hardcore vegan - should see. It reminded me of the days when I first made the choice to go vegan, what it was like to become the kind of person who cared about what I ate, and realizing for the first time the implications of my eating habits on others.

I won't lie. It won't be like some highschool yearbook that only shows the fun parts. You'll laugh, you'll cry, and you might even blush a bit; but you'll be glad you took this trip down memory lane by proxy. Every vegan's story is different. Some people are like me, and decided in some kind of lightening bolt moment that they didn't want to contribute to the suffering of animals and went vegan on the spot. But for others it was a growing experience that took time and a little effort to find a way that worked for them. I think it can be easy to forget that journey when you've been vegan for years and your closest friends are vegans and activists. Watching Vegucated didn't just remind me why what we do is important, it also has some encouraging and inclusive messages that people at any stage in the vegan spectrum** can relate to. Plus, I couldn't be happier or prouder of my friend Marisa Miller Wolfson. I mean seriously, how many people can honestly say they're a documentary filmmaker? And no I don't count all those people who say it to get women into bed... that's why I added the 'honestly' part.

Back to the event! The food was remarkable! Brooklyn's own V-Spot served their infamous black bean empanadas. There was actually a pretty notable spread featuring food from quite a few of New York's Vegan Hot Spots like Candle Cafe, FoodSwings, Cinnamon Snail, and Verite Catering. Even Sweet & Sara vegan marshmallows to dip in a dark chocolate fountain. And of course we can't forget Smuttynose beer from City Swiggers and organic wine from Frey Vineyards. They even had some of my favorite frozen treats from Soy Delicious.  I know I've said it before, but it bears repeating: no one loves food like a vegan! You had to be brave and assertive to get the good stuff from the buffet table. If it wasn't for Dan, I'm pretty sure I would have starved.

We had great seats between Matt Rice from Mercy For Animals and the Cartoonist and longtime Animal Advocate Dan Piraro and his wife Ashley. If you've never met Ashley, you should know that she is probably one of the most passionate and exciting activists on the planet. Lord only knows how many animals she has saved just by being awesome. We got to see Chloe Jo Davis from Girlie Girl Army, which is always pretty much the definition of 'Vegan Treat', and catch up with more friends than I can name.

Between the film, the food and the friends - it was one of the first nights of hopefully many that reminded me why this is the best city on Earth.

** The Vegan Spectrum - I like to think that inside everyone is a vegan waiting for their chance to get out. Some of those inner vegans are completely free to live and explore all aspects of a cruelty-free life with no exceptions and for others that vegan is only allowed out to enjoy a cute LOLcat... but I have a hope that even the furriest wearing, meatiest eating, heart-of-ice hunter will someday have that personal moment many of us have had that made being a vegan make sense and work for them. They'll let that inner vegan out and start making choices that reflect that innate compassion for animals so many of us started out with as children. I mean there are very few of us out there that were born vegan and if we can make this choice why can't they? I'm believer that there is always enough room in the Vegan Club and everyone is welcome.

Let The Vegan Collection Love-fest Contest Begin!

If you know my husband in real life, you know that he likes what he likes, and that his loyalty to a "good thing" is eternal. Sharing your life with someone like that is easy at Christmas and predicable at restaurants. I could list off examples of the things my love loves for like an hour, but here's what matters today: Dan freaking loves his Vegan Collection wallet. He loves the look. He loves that it's a classic guy's wallet that fits in his pocket. He loves that nobody was hurt making it.

The Teal Cat Project - The Who, What and Whys

I've heard estimates that there are tens of thousands of feral cats in NYC, and it's not hard to believe. Just last night while we ate dinner on our stoop, we watched the five kitties who live on our street hang out and be cute in a distant, distrusting way. Of course, one street up from us there are another five cats, and the street above that there are another five. Think about how many streets are in Brooklyn. Now add Queens. Throw the Bronx in there... See where I'm going? Do the math. That's a lot of cats. And life on the streets isn't as ideal as Disney made it sound in The Aristocats. I've never heard of anyone stumbling across an all-feline swing band, and I'm on the internet a lot. 

Brooklyn native, vegan cookbook author, and all-around Post Punk Kitchen Bad-Ass Isa Chandra Moskowitz knows first hand how heart-breaking the NYC feral cat situation is, and has teamed up with Denise Muller and Anna Dorfman to create The Teal Cat Project. If you follow me on Facebook and Twitter, you're probably sick of hearing me gush about this outstanding program. But if you don't you might be asking yourself - What is The Teal Cat Project? 

Well, besides one of the best fundraising ideas for animals I've seen in a long time, for $25 (plus shipping) they will send you a cat tchotchke that has been "upcycled with teal paint, and outfitted with a numbered tag for authenticity" and that money goes directly towards their affiliated kitty rescue programs. They are currently sold out of their first run of blue kitty tchotchkes, but you can always donate one for the second run or get a t-shirt to show your support!

A Special Message from The Shannons

So yesterday something kinda strange happened. We got what I am calling "Hate Mail". It's wasn't from the usual Pro-Bacon-Hipsters or Eggy Mayo Loyalists who stumble in from time to time. It was numerous comments from people claiming to be readers who declared that they would stop reading our blog and tell their friends to join their "boycott" because we supported New York State's historic marriage equality bill . The comments were pretty hateful actually and all offensive. Now, I have no idea who posted them. They could have been vegans. They could have been pirates, or vegan pirates, or Pro-Bacon Hipsters & Eggy Mayo Loyalists with a nasty bigoted streak in them... who cares really? I would rather hateful people didn't read our blog. This is a place for celebrating living a cruelty-free life and that includes not being cruel to people as well. So, if you're into being a dick, this is not the right blog for you.

But that's not really the point of this post. Yesterday, I vented on Twitter about the hatemonger comments. I've been all emotional on Twitter these past few days. I can't explain it. But this stupid thing happened, and then I tweeted about it because I got sick of deleting comments. But then something happened that - in all seriousness - caused me to become verklempt. There's no better way to describe it.

I came home from dinner to find a series of supportive tweets from readers and other vegan bloggers, not only supporting Meet The Shannons and marriage equality, but being real friends. Since we started this blog, one of the best parts has been joining an online community that is doing such a great job promoting compassion for animals and being more environmentally friendly... and just being more amazingly kick ass. So Thank You Girlie Girl Army, Citizen Radio, Vegan Good Things, Erin Red from Vegansaurus, Kitsch & Kitchen, Laughing Samuari, Vegan Verite, and everyone else who tweeted support yesterday and understanding that the "pursuit of happiness" should include all America's citizens. We love you guys.

All Kneel Before The Great Herbivore Contest of 2011!*

Anyone who has ever planned a wedding has at one point realized the importance of having a good photographer. You look at how much money is being spent, think about all the folks traveling from all over, and it becomes clear that not having legit documentation would be a tragedy.

And anyone who's ever been anywhere near a wedding has experienced what is captured in this video. Now you might be tempted not to watch it, but someday you'll be old and will regret that choice.

When it came to our wedding, my first and most important request was that there would be no campy wedding photographer hijinks. No Easter baskets full of bridesmaids. No pretending we're on a trampoline. No Photoshop shenanigans. No freaking pyramids!

I can tell you this was clearly explained to our photographer, but alas, the day came and I was unprepared for the pure insanity that was inflicted on my loved ones. I mean it was so bad I keep expecting Ashton Kutcher in a trucker hat to pop from a the bushes all like "Dude! Hilarious!" Two years later, I've found a way to laugh at these photos. Many of you have already seen photos from our cruelty-free wedding on Offbeat Bride, but today you're going to see two never before released director's cut photos and get a chance to win a FREE t-shirt from Herbivore Clothing Company!

You were two for $1 at the fruit stand. So we figured we'd give you shot. I am so glad that we did.  You may look like a cucumber on the inside but you taste more like kiwi and were lovely with breakfast. Not to mention a good source of vitamin C.

Behold The Shannon Smoothie Rocket Pop!

So! We were suppose to launch an awesome contest today but I can't find the disk with the photos I need to do that. Am I the worst wife ever? I mean I didn't kill anybody but yeah I lost a ton of blogger/wife points today. You'll understand better when I find that disk.

In an attempt to not completely disappoint you all, I am sharing a recipe I hope will be as popular at your house as it was at ours. When this treat was in it's concept phases, I admit the initial draw was getting to use these freaking adorable rocket pop molds we found at Whole Foods but after eating a few, we've come to our senses. This recipe is a perfect combo of real fruit and good for you and summertime and awesomesauce and kittens riding rainbows*. I might even dare to say I prefer them to the original ones. Mostly because the berries in this one were grown on bushes and not electric blue. Though I admit I have fond memories of techno-color blue foods as a child. Raspberry or Blue was a popular flavor in the late 80s-early 90s when I coveted slurpees. 

If rockets** aren't your thing, there are many other adorable and random Popsicle molds available these days to bring back your childhood memories.

A Visit to Woodstock Farm Animal Sanctuary...

Hidden in the rolling green hills of the Catskills is happy little farm where a band of merry misfits have made a home... it's called Woodstock Farm Animal Sanctuary, and last weekend we drove up for their July Jamboree.

There was a ton of vegan food, games for the kids, and of course lots of happy animals who have been rescued from sad, scary fates. As people who have spent years of their lives advocating for animals, and have witnessed both first hand and through countless hours of video the horrors animals face everyday, it is an indescribable pleasure to see how happy these animals are. I mean, I can't even begin to tell you how delighted it makes me to see the goats line up to meet new people and the pigs sleeping the day away in muddy grass. While we were visiting with the chickens, some of them fell in love with Dan and were literally climbing all over him. Maybe they remember him from his days working on Peta's KFC campaign?

This was really one of the best days we've had in a long time. If you ever find yourself in the area, you have to plan a trip to meet these wonderful animals! It will inspire you like nothing else to advocate for those animals less fortunate than these guys, and remind you why eating compassionately is so important.
