The Cupcakes Unofficially Inspired by The Lorax
Like many vegans in my generation - I haven't always felt that I was surrounded by people who truly understood where I was coming from.
I've always found that strange because to be perfectly honest I've never really understood why because I feel like I can trace my origins back like some kind of circuit diagram through 80s popular culture. I learned that vivisection is cruel from The Secret of Nimh and Project X. I learned that animals don't want to be eaten from The Muppet Movie and that hunting was scary and pointlessly sad from The Muppet Show and Bambi. Circuses are indifferent to the wants and needs of the animals in their care from Dumbo and that wearing real animal fur is more than vanity - it's just mean past the point of being a sane person from 101 Dalmatians. As I was learning that being a human being was a privilege, I also learned that it came with a responsibility to protect those who couldn't protect themselves and that included their homes - from The Lorax.
Now it would be really easy right now for me to rant here about how the new Lorax movie is being used to greenwash companies that aren't doing all they really can to live up to the message of this book but others have already done that and to be honest - this is my happy place. Here is where I focus on the positive things - like how this movie will hopefully introduce our friend with the orange mustache to a new generation and how I hope a handful of them grow up to continue where I will have to leave off someday.

NYC gets Vegucated!
It's a scientific fact that for centuries, New York City has attracted a higher percentage of the most talented and creative people in the world than the original York (or as some might call it, Old York City). When we moved here, I have to admit I was both excited and intimidated by this. I mean if we're being honest here, I'm more Brooklyn than Manhattan, and sometimes I'm pretty sure the Manhatteners can spot it. How could they not? But tangents about my awkward nerdness and the social dynamics between these two neighboring boroughs aside, we were both excited about moving to New York because the few people we knew here were part of that talented and creative demographic I mentioned earlier who are busy doing some of the most amazing things to make the world a better place for animals. A lot of those spectacular people were at the New York City Premiere of Vegucated last week.

It was a sold-out show with an audience of 500 beautiful people dressed for the red carpet in a city know for its fashion. But people weren't just there to get their picture taken; this crowd came ready to see this new feature-length documentary that followed three meat-loving New Yorkers experimenting with a vegan diet for six weeks. I know I've been raving about this film a lot lately, but I just got so excited when they won the award for Best Documentary at this year's Toronto Independent Film Festival. It's the kind of film that everyone - even the most experienced activist and hardcore vegan - should see. It reminded me of the days when I first made the choice to go vegan, what it was like to become the kind of person who cared about what I ate, and realizing for the first time the implications of my eating habits on others.

I won't lie. It won't be like some highschool yearbook that only shows the fun parts. You'll laugh, you'll cry, and you might even blush a bit; but you'll be glad you took this trip down memory lane by proxy. Every vegan's story is different. Some people are like me, and decided in some kind of lightening bolt moment that they didn't want to contribute to the suffering of animals and went vegan on the spot. But for others it was a growing experience that took time and a little effort to find a way that worked for them. I think it can be easy to forget that journey when you've been vegan for years and your closest friends are vegans and activists. Watching Vegucated didn't just remind me why what we do is important, it also has some encouraging and inclusive messages that people at any stage in the vegan spectrum** can relate to. Plus, I couldn't be happier or prouder of my friend Marisa Miller Wolfson. I mean seriously, how many people can honestly say they're a documentary filmmaker? And no I don't count all those people who say it to get women into bed... that's why I added the 'honestly' part.

We had great seats between Matt Rice from Mercy For Animals and the Cartoonist and longtime Animal Advocate Dan Piraro and his wife Ashley. If you've never met Ashley, you should know that she is probably one of the most passionate and exciting activists on the planet. Lord only knows how many animals she has saved just by being awesome. We got to see Chloe Jo Davis from Girlie Girl Army, which is always pretty much the definition of 'Vegan Treat', and catch up with more friends than I can name.
Between the film, the food and the friends - it was one of the first nights of hopefully many that reminded me why this is the best city on Earth.

** The Vegan Spectrum - I like to think that inside everyone is a vegan waiting for their chance to get out. Some of those inner vegans are completely free to live and explore all aspects of a cruelty-free life with no exceptions and for others that vegan is only allowed out to enjoy a cute LOLcat... but I have a hope that even the furriest wearing, meatiest eating, heart-of-ice hunter will someday have that personal moment many of us have had that made being a vegan make sense and work for them. They'll let that inner vegan out and start making choices that reflect that innate compassion for animals so many of us started out with as children. I mean there are very few of us out there that were born vegan and if we can make this choice why can't they? I'm believer that there is always enough room in the Vegan Club and everyone is welcome.

The Betty Crocker Project : Tequila Fajita Vegan Chicken Wings
There has been a kind of overload of awesome happening lately.
Exhibit A: You might know Brea Grant from Heroes or maybe Friday Night Lights, but you will definitely know her from her upcoming role in Dexter. What you might not know is that she writes comic books
and reads Meet The Shannons! She also made some bewitching 24 Hour Pickles! How kick ass is that? Answer : River Tam kick ass*.
Exhibit B: I found this marvelous tumbler full of ridiculously adorable and well-educated cats by Sarah Sobole and fell madly in love. It all began when I was sent this:
I've never really seen myself captured so completely in art before**. It's weird... it's like Sarah is spying on me right now. Or perhaps is my doppelganger.
Exhibit C: We made Tequila Fajita Vegan Chicken Wings. I know I've said this before, but if you get a chance to try out these Vegan Drumsticks from May Wah, you really need to. They're one of the best mock meat products on the market, and are great with pretty much any glaze or sauce we've ever tested them out with. They can be grilled, baked, or fried--pretty much making them a perfect replacement for those wings and drumsticks actual chickens need more than we do.
If you can't get your compassionate little hands on these wings, you can always use this Tequila Fajita baste on your favorite vegan chicken on a skewer, and then toss them in an actual fajita wrap. Whatever you do, make sure and make a batch of Salsa Verde. Honestly, it's an amazing combination of hot, tart, and savory that I can't praise enough. If it sounds like I'm gushing right now it's because I totally am.
All and all this week has ended on a high note, free of sudden and inevitable dinosaur betrayals and full of pretty dresses... Yes, I did finally get that bunny dress I've been tweeting about. Expect to see it in action soon, because I'll be wearing it this weekend when we film our first podcast!

The Betty Crocker Project : Artichoke & Spinach Dip

Is there anything cuter in the vegetable world then a little green onion? Hmmmmm. Nope.
Lately Dan and I have been focusing quite a bit on cute. We've had a lot of cute things in our lives these days, and I'm about to gush about one of them: a little XBox Live Arcade game featuring the artwork of Dan Paladin (Ed. note: no relation.) called Castle Crashers.
We spent a good part of Saturday night beating this game, and I was almost sad to see it end. From the second the adorable little castle band starts to play, I was totally hooked. Even the ghouls and zombie polar bears are freaking precious but you don't have to take my word for it. You can just watch this (you have to hit 'read more' at the end to see the player):
Another charming item making a special appearance this week: The Artichoke. Man, I love artichokes! They're delicious, spiky flowers that I would eat everyday if I could. Expect some artichokes this week; we have another recipe coming up that I think is going to rock.
Until then, bake yourself up a dish of this incredibly delicious dip that is the perfect bribe to get your friends over to play Castle Crashers. Castle Crashers and this dip are designed to share with loved ones. I'll be honest: it's kinda rich. Here's a photo of the not so vegan at all version - ours isn't nearly as rich as that. Actually, it isn't even close to being as rich as the "lighter" version suggested in the cookbook. But put this on a thin cracker or pita... this dip is pretty much divine.

The Betty Crocker Project : The 24 Hour Pickle (also known as Refrigerator Pickles)
I still can't believe how many people I know made pickles this weekend.
I had all these daydreams of posting these and everyone saying "WOW" and "I can't believe how easy those are". But much to my chagrin, when I started dropping teasers for these babies, the response was a round of "Me Too!" I guess I have too many talented and crafty while still remaining fashionable yet remarkably intelligent friends. SIGH. There are worse things I suppose.
Now, I love pickles. I always have. When I was little my grandfather used to buy me one of those big barrel pickles from the shop on the corner to keep me busy for a few hours after school while I watched cartoons*. When I think of any kind of pickle, garlicy gourmet ones to crappy ball park chips, my mouth begins to water. No joke. I'm not trying to be poetic here. I adore them all. Sweet, Kosher, Tsukemono, Half -Sour, Gherkin - Whatever! They will always be welcome on my plate - Hell - in my hand.
These pickles are not the traditional wait a month pickle. Anyone who knows me, knows I can't wait a month anyways. It's too hard on me. Some folks just aren't built for traditional pickling. That's why Betty - God bless her - has this recipe for folks like me. They only take 24 hours and are crisp with the old school zayern flavor. So if you weren't one of the many who already have a jar of homemade pickles waiting in their kitchen, you should try these out.

The Betty Crocker Project : Carrot Cake Cupcakes with Cream Cheese Frosting
Once upon a time in the little neighborhood of Ghent, I used to bake a lot of cupcakes.
I baked dozens and dozens of cupcakes. I baked for birthdays and parties, slow Wednesday nights, whatever. I just really like to bake, and cupcakes are easy to make vegan and pass out to various loved ones. I also find them just charming. I like their little wrappers and sprinkles and all the cute things you can do with them. I like injecting them with fruit or frosting. These little handfuls of adorably-shaped sugar were a nice outlet for some bottled-up creativity in my life.
But lately something has changed.
Since Dan and I started working our way through The Betty Crocker Cookbook, we've found ourselves faced with more creative outlets than we have room in the fridge. I know, I know. Your first instinct is to call "shenigans," but seriously, we often find ourselves running out of hunger before we run out of casseroles and cookies. You know who pays the price in the end? The cupcakes. The neglected little cupcakes.
But now they're back!

The Betty Crocker Project : Kung Pao Pork
I could type up a whole thing here about how even though Betty made this a pork recipe, the most common version of this is dish made with chicken; or about the political strife that lead to this dish being renamed for about a hundred years because of its association with Ding Baozhen. I could even go into the fact that this is an Americanized version of a classic Sichuan dish that was developed because from 1968 until 2005 it was illegal to import Sichuan peppercorns into the United States. But when I woke up today, I just wasn't feeling it.
Instead, I'm going to give you a list of my 5 favorite onomatopoeias from Batman--it is Kung POW Pork, after all. Please leave a comment to share your favorites as well.

The Future is Here! The Herbivore Meets The Shannons Contest Results!
About a lifetime ago, Lisa Simpson (one of our favorite animated vegans) traveled into the future and almost married a yellow floppy-haired Hugh Grant British type. The date of that never-to-be wedding was... YESTERDAY! GASP! Yes folks, the future is here! Where's my flying car and robot dog/vacuum cleaner*?
Well, while I wait for technology to catch up, let's anounce the winners of The Herbivore Meets The Shannons Contest.
The winner of our voting contest: Italia! I've already sent her a message and hopefully we'll get that $25 Gift Certificate and a stash of Buttons and Stickers from Herbivore Clothing in the mail to her soon. Hopefully she'll send me a photo of what she buys so we can all shop vicariously through her.
The dish we are making this week from The Dan and Annie Wedding Reception Menu : Italian Wedding Soup! I just need to hunt down a few things and should be getting that recipe to you in a few days.
Don't worry: if you didn't win this time, we have another contest being launched tomorrow! GASP!
(I'll leave it like this for one of those cliffhanger endings that make all the bloggers go into caffeinated frenzies and starts one of those so-called "buzzes" all the kids are talking about.)
