The Betty Crocker Project : Thanksgiving Parade #2 - Easy Pumpkin Pie?

Is this pie have that warm slightly spicy flavor that can only be described as "Pumpkin Pie"? Yes. Does it have that smooth & creamy texture with just the right amount of crispy baked edges? Yes. Is this a pie? Eh. Not really... Is it an amazing baked pumpkin custard type of thing? HELL YES!

Yeah I know kinda a disappointment if you're one of those folks who needs the "pie" label and had hopes that you really could make a pie in like 5 minutes (not counting baking) but you want to hear an even greater disappointment? Soyatoo Vegan Whipped Cream. Yeah, I know I'm saying it. Soyatoo - You owe me 5 cans of Vegan Whipped Cream because EVERY TIME I get you - you barely work and then fraking die with a full can of vegan whipped cream that I have no way to access. I always convince myself - I got a bad can or maybe it's I'm too dumb to work this thing... but you know what? I'm not. It's not me - it's you. Soyatoo - we're breaking up.

Here's hoping I learn to love again and that you all find a spot in your heart and holiday meal for this wonderful baked pumpkin custard type of thing.

Easy Pumpkin Pie 
  • 1 Cup Pumpkin (not Pumpkin Pie Mix)
  • 1/2 Cup Bisquick (there are several versions read the label to make sure you get a vegan one)
  • 1/2 Cup Sugar 
  • 1 Cup Coconut Milk 
  • 1 Tablespoon Margarine 
  • 1 1/2 Teaspoon Pumpkin Pie Spices
  • 1 Teaspoon Vanilla
  • 1Tablespoon Applesauce
  • 1 Tablespoon Ener G Egg Replacer 

Heat oven to 350.

In a large bowl, stir in all the ingredients with a wire whisk until blended.

Here's a pretty great Betty Tip to prevent spilling : Open your oven and place the pie pan/dish on the rack and then pour the pie filling into the dish.

Bake 35-40 minutes and let cool an hour on a rack before serving with some other vegan whipped cream than Soyatoo.

  1. OMG, the last three cans of Soyatoo I have bought I have had to take back to Whole Foods (happily they are great about taking them back, no questions asked). But alas, I have now decided to wait a long while before trying another can.

  3. same thing happened to me when i bought a can. it had good taste while it lasted, which wasn't long. so disappointing, especially for how expensive they are!

  4. I learned a valuable lesson - store it upside down, and take it out of the fridge 15 min before you want to use it. Also, if you go to use it and only get the hiss, STOP! Shake it thoroughly and wait some more. Sometimes running it under warmish water helps.

    Really is a ridiculous amount of forethought for something that should be instant gratification :)

  5. Consider getting your Soy whipped cream from Planet Organic, or any other place with a no-questions-asked exchange policy, even on used goods!

  6. Here, in Australia, I buy the Soyatoo in a small long-life style 'milk' carton because I, likewise, refuse to buy the pressurised cans again.
    We are not blessed with vegan cream (whipped or otherwise) choice here... so I persist, with the brand, a least.

    I love the look of this pumpkin custard/pie. Now if only we could buy canned pumpkin here. Oh and pumpkin pie spice.

  8. As Amie said, out of the fridge and upside down! I just refuse to give up the "squirty cream" of my youth because the only brand I can find that makes it hasn't worked out how to do pressurized cans!

    Now... to try the pumpkin custard thing...

  9. Ahhh! I thought we were the only ones with the faulty cans!! I'm glad to see some tips here, I might try them out next time before throwing the towel in completely.
