The Betty Crocker Project : Special Leftovers Edition

We get a lot of questions about what to do with leftovers. So we thought we'd share some of our favorites thus far.



Exhibit A : I was calling it The Patty Mac. (see photo above)
We made about 2-3 cups of macaroni and mixed it with reheated Fondue. Then we took one patty from The Patty Melt - reheated it and cut in half and broke it up over the top of two bowls of the mac and cheese. It was a pretty fancy Hamburger Helper-ish  dinner that I'm also having for lunch today. Yes, that does mean we have leftovers from the leftovers. There is only two of us.

Exhibit B : The Breakfast Taco Nachos

We just used some blue corn chips with the fixings for The Breakfast Tacos with some black beans and Litelife Mexican Smart Ground. We cooked the Black Beans and Fake Taco Meat in our little cast iron skillet buddy with some Olive Oil, Liquid Smoke and a dash of Texas Pete. Then we put it on the chips with the Daiya Cheddar Cheese and baked it in the oven at 300 till the Cheese melts. Dan used an extra Avocado to make guacamole. Then we piled on the other fixings and nommed.
Dan's Guacamole 
  • 2 Large Ripe Avocado
  • 2 Tablespoon Lime Juice
  • 1 Clove Garlic (minced)
  • Dash of Texas Pete Hot Sauce
  • Salt and Pepper to taste
 Mashed the Avocado into a paste and mix in the rest of the ingredients. Then eat - eat - eat. 
We ate ours with the leftover Buffalo Wings dipped in Dan's Agave-Dijon Sauce (see below) while we watched the Celtics make into the Playoffs with some beers.  
Dan's Agave-Dijon Sauce
  • 2 Tablespoons Agave Nectar
  • 2 Tablespoons Dijon Mustard 
  • 2 Tablespoons Veganaisse 
  • Splash of White Wine
Whisk it together and dip things in it!
This is the good life.

  2. I just want to say you are amazing, both of you.
    I am struggling with my family and friends because I am vegan, and sometimes miss the sentimental parts of my old meals, not the meat or taste themselves.
    I finally got around to start reading your blog.
    Your husband is a "nerd" (or geek or however they liked to be called) AS IS my boyfriend (he's a total comic nerd.) I am vegan and struggle to find foods I like and can eat (I have a digestive disorder.) He is moving in soon.
    I am SO EXCITED to start trying these recipes! Now, if only I can get my boyfriend to give up cheese ....

  3. Is there a vegan variety of Texas Pete? My mom loves that stuff, but I won't eat it because the one she gets is made with butter (as a minor ingredient, but nonetheless, it is there).

  4. Hi - So we were asked if Texas Pete was actually Vegan. The Texas Pete Hot sauce we have in our fridge and I am look at right now is. Here are the ingredients listed : Peppers, Vinegar, Salt, Benzoate of Soda (to preserve freshness and flavor).

    Also - We like Texas Pete but it's not really all that different than Tabasco - Which is also vegan : http://www.tabasco.com/tabasco_tent/pepper_sauce/red_pepper_sauce.cfm

  5. Oh and Quarrygirl : I have daydreams all the time about starting a restaurant. . . with an soy ice cream soda fountain and a bakery case full of vegan donuts. pies and cheesecakes and a menu full of vegan Reubens and Tempeh Tacos . . . SIGH.

    You know anyone looking to make the dreams of a vegan cook/baker/ballerina/nerdling come true?
    Like a vegan wishing star foundation - where I don't have to sick to qualify. :)
