Curry Vegan Chicken & Potato Salad Inspired by Kittens!


At this point in the summer, you probably have a few BBQs and potlucks under your belt. You've fired up your grills and eaten a few meals outside in the sun. I have no doubt you've also enjoyed a few pasta and potato salads... the vegan's loyal summertime friends.

If this salad were in the Olympics, it would be the triple axel triple toe loop that would have brought the 80s Eastern European judge to tears. We combined two summertime favorites, Chicken Salad and Potato Salad, and added a warm seasoning twist to this classic and often overlooked chilled dish. We're taking this "side" out of the shadow of those showy pies and veggie burger headliners; just like how Star Trek: The Next Generation began as a spin off of a wildly popular cult classic, but with some tweaks here and there came into its own, and some would argue is superior to the original*. You know what I mean... don't act like you're too cool for Star Trek.

Curry Vegan Chicken & Potato Salad
  • 2 Cups Your Favorite Vegan Chicken (defrosted - some suggestions for Vegan Chicken are Gardein (that's what we used this time), Match Vegan Meats, LightLife Chicken Smart Strips and Morningstar Farms Chicken Strips)
  • 1 1/2 Pounds (24ozs) Small New Potatoes (cubed - we used the mini ones you see above)
  • 2 Tablespoons Olive Oil
  • 2 Cloves Garlic (minced)
  • 1 to 3/4 Cups Veganaise
  • 3 Stalks Celery (diced)
  • 1/2 Cup Red Onion (diced)
  • 1/2 Cup Frozen Peas
  • 1/3 Cup Raw Carrots (shredded)
  • 1/4 Cup Fresh Cilantro (diced)
  • 2 teaspoons Curry Powder ( I know there are many different types of Curry Powder - we used the unhelpfully named 'Organic Curry Powder' from Trader Joe's)
  • 1/4 teaspoon Cayenne Chili Powder
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Sea Salt
  • 1/2 teaspoon Poultry Seasoning (there are many brands that are vegan - you just need to read some labels)
  • 1/4 teaspoon Lemon Juice
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Ground Black Pepper
  • 1 Can Garbanzo Beans (drained and rinsed)
  • Paprika to sprinkle over the top
Heat oven to 400.

In a shallow glass baking dish, toss Vegan Chicken, Potatoes and Olive Oil until everything is evenly coated. Bake for 20 minutes or until the Vegan Chicken and Potatoes are a light golden brown and have a light crispy crust. Cover with foil and put in the fridge to chill for 30 minutes.

During that time mix remaining ingredients except Paprika in a large bowl until they are completely blended. At this point you should only add 3/4 a cup of Veganaise. After you add your Vegan Chicken and Potatoes, you can add more Veganaise if you want your salad to be creamier. Put your Veganaise and Garbanzo Beans in the fridge and let them chill for 10 minutes to help blend the flavors.

After the Vegan Chicken is chilled, chop the Vegan Chicken into bite sized pieces. The toss the Vegan Chicken, Potatoes and Olive Oil into the Veganaise and Garbanzo Beans mix and put it back into the fridge for another 30 minutes.

Sprinkle some Paprika over the top and enjoy!


* I won't judge you if you are one of those but I'm more old school that. In other words, I'm an old grump and can't admit new things can be awesome too. (insert grumble-grumble here)

  1. Sounds amazing! Now my only question is: Is there anything out there that can replace cilantro (in any dish. It tastes like I am eating a bar of soap and it has ruined many a favorite Thai dish.)

    Or do you think this dish can stand on its own without the cilantro? (I would assume yes, but I don't want to make the dish seem lacking if I could have substituted from the beginning.)

  2. It's funny, I've heard that about cilantro before. I really like floral flavors so that might be why I love the stuff... hard to say... I think the dish could be good without the cilantro but if you want to add a little green and the sorta fresh flavor that comes from that - I think you could replace it with diced parsley.
